How to Make Easy Chicken-Onion Entrees

Chicken is a staple in the American diet. It is inexpensive, easy to prepare, and can be used in any number of ways. And overall, it is a healthy food. Onion Baked Chicken is a simple to prepare entree that can be prepared and placed in the oven to bake while you prepare the rest of the meal, set the table, or do whatever else you need to do. The Parmesan Chicken with Red Onion Wedges is an ever quicker meal since it uses boneless breast meat.

ONION BAKED CHICKEN

3 lb chicken pieces

1 tbsp extra virgin olive oil

1 tbsp onion powder

1 1/2 tsp Italian seasoning

1 tsp salt

1/4 tsp black pepper

1/2 tsp garlic powder

1/2 tsp paprika

1 medium onion, sliced

Preheat oven to 375 degrees.

Brush chicken pieces with the olive oil. In a small bowl, combine the onion powder, Italian seasoning, salt, pepper, garlic powder, and paprika. Place the onion slices on the bottom of a shallow baking dish. Coat the chicken pieces evenly with the seasoning mixture; place in the baking dish on top of the onion slices. Bake at 375 degrees for 45 to 50 minutes or until the juices run clear and chicken is cooked through.

PARMESAN CHICKEN WITH RED ONION WEDGES

4 boneless skinless chicken breast halves

1/2 cup panko (Japanese) bread crumbs

1/2 cup shredded Parmesan cheese

1/4 tsp black pepper

1 egg

2 tbsp water

1 red onion, cut into 4 wedges

Preheat oven to 400 degrees. Coat a large baking sheet with nonstick cooking spray.

Cut chicken into 1-inch slices. In a pie plate, combine the panko crumbs, Parmesan cheese, and pepper. In a shallow bowl, beat the egg and water together with a fork. Dip chicken pieces into the egg mixture, then into the panko crumb mixture, pressing to coat. Place on the prepared baking sheet and coat the surface of the chicken with cooking spray. Add the onion wedges to the baking sheet and also spray them with cooking spray. Bake at 400 degrees for 10 to 15 minutes or until chicken juices run clear.
