Boca Chili For Those Vegetarians Out There!

A short history about BOCA:

It used to be that a back yard barbeque was not a great place for a vegetarian but today with all the choices out there and people wanting to be healthier eaters it is not uncommon to find xtra lean ground beef or turkey burgers or even the Boca burgers just to name a few. You have you fixins for the burger and there would no way to tell the difference that you have joined the healthy eaters of america.

Food choices have come a long way and now for your choices outside the burger world you have your hot dogs, cheese and so many other choices available. You have your breakfast sausages, egg substitute for those watching their cholesterol and of course all of the fruit and vegetable choices out there.

When I make my taco meat I now use ground turkey and my kids love it as their favorite choice of taco meat. My daughter and her friend are really into the Boca meat and requested that I come up with a chili recipe for them.

The following is my personal recipe for Boca Chili.  

Ingredients:

6 Boca burgers diced up and browned or

you can use the prepared package of crumbled.

1 onion diced or slivered

2 garlic cloves crushed

1-1/2 tsp cumin

1 package taco seasoning

1 sm can enchilada sauce

2 cans tomato sauce (15-1/2 oz)

1 large can diced tomatoes (32 oz)

2 cans red beans (15-1/2 oz)

2 cans pinto beans (15-1/2 oz)

(juice and all)

Water as needed for consistency

This is a simple process, just brown the Boca, saute the onions and garlic and add it to the Boca. Add all the other ingredients and just let simmer till the flavors marry.

Serve it with the following toppings if you so desire:

Diced onion, shredded cheese, sour cream and possible some salsa to kick it up a notch.
